For one thing, each cookie is massive (hence the name) and ultra-soft because the dough uses the tangzhong method, which is typically reserved for pillowy milk bread. 2) Pain de Campagne (Country Bread)

Not only does this recipe make an excellent sourdough loaf — crunchy, crackly, and with an open crumb — but it also uses discard starter in the dough. That means you can bake with starter straight from the fridge, as long as it’s healthy and has been fed within the past week. Long, flexible fermentation times mean this recipe can also fit seamlessly into your schedule, as Martin demonstrates.
